Sweet Courgette Bread & Homemade Nutella 

Finally, a guiltless place to run to on a Friday night when I feel like binging on a big tub of Nutella after a hard week’s work. Okay, maybe my Homemade Nutella isn’t completely guiltless, but it is made from wholefoods and is a lot less likely to do you harm over the original. 😉 

Plus, I’m a lot classier than spooning out the tub on its own anyway; I’d much rather it slathered on a nice slice of this Sweet Courgette Bread which, by the way, is bulked up with a lot of good stuff. Nutella on bread for after tomorrow’s workout I think. 😀  Let me know how ye get on with either or both if ye try them out! 


  • Courgette, x1
  • Oat flour, x1.5 cups 
  • Honey/agave syrup, x3 tblspns
  • Medium-sized banana, x1
  • Vanilla extract, x2 tblspns
  • Whey protein powder (I used strawberry), 2 tblspns
  • Milled chia seeds, x3 tblspns
  • Free range egg, x2
  • Baking powder, x1 tblspn
  • Pinch of salt


  1. Preheat the oven at 180 degrees Celsius.
  2. Grate the courgette into a mixing bowl, followed by the honey, egg, mashed banana, vanilla extract, oat flour, protein powder, chia seeds, baking powder and salt.
  3. Mix the contents thoroughly with a wooden spoon and pour into a standard bread tin lined with coconut oil (not necessary if using a silicone tin). Make sure the mixture isn’t too watery – otherwise add in some more oat flour.
  4. Bake for 20-25 mins (stop at 20 mins and pierce with a skewer. If it comes out wet, bake for longer). 
  5. Place the bread on a cooling rack for approx. 20 mins before cutting and serving.


  • Hazelnuts, 50g
  • Coconut sugar, x1 tblspn
  • Coconut oil, x2 fine tblspns 
  • Cocoa powder, x1 tblspn 


  1. Preheat the oven at 180 degrees Celsius.
  2. Roast the hazelnuts for 10 mins.
  3. Into a high powered blender or Nutribullet, first add the roasted hazelnuts and mill into a powder.
  4. Melt the coconut oil and add to the food processor, followed by the sugar and cocoa powder. Blitz until smooth (it might be necessary to scrape down the sides of the blender between blitzing).
  5. If the mixture is too dry for your liking, simply add some more melted coconut oil.
